Crispy Walnut Cauliflower Tacos

These crispy walnut cauliflower tacos are a simple, satisfying way to enjoy plant‑based eating using real, whole foods. They’re crunchy, flavorful, and come together quickly and are perfect for a weeknight dinner or meal prep for busy days.




For the “meat” filling

  • 1 small head cauliflower, roughly chopped

  • 1 cup walnuts, roughly chopped

  • 1 jalapeño

  • 2–3 tbsp taco seasoning (or chili powder, cumin, smoked paprika, garlic powder, turmeric, salt)

  • 2 tbsp tomato paste

  • Salt and pepper to taste


For serving

  • Crunchy taco shells

  • Shredded lettuce

  • Diced tomato

  • Diced onion

  • Non-dairy sour cream

  • Avocado

  • Cilantro

  • Taco Sauce

Quick Steps
