Switch up your taco filling using nuts and seeds as your base and top with colorful veggies for a heart healthy, not boring, plant-based taco night. This recipe is full of protein, fiber, healthy fats, magnesium, and micro-nutrients. So you can enjoy taco night while fueling your nutrition with whole minimally processed foods. Win Win!!

Ingredients:
Pumpkin & Sunflower Seeds
Taco Seasoning
Taco Shells
Black Beans
Carrots
Red Peppers
Tomatoes
Avocado
Olive Oil
Coconut Oil
Jalapeno
Garlic
Lime
Arugula or Baby Kale
Parsley
Salt & Pepper
Make It:
Soak black beans overnight, then prepare. Pulse pumpkin & sunflower seeds in a food processor until it makes a crumbly texture, then add a scoop of coconut oil and taco seasoning and pulse again. Brown the seed mix on the stove and prep all fresh veggies. Make the avocado sauce by combining avocado, a little olive oil, a jalapeno, 1-2 garlic cloves, and lime juice plus salt & pepper in a small blender. Layer all on a taco shell, and make it pretty!!
