Plant-Based Power Bowl

Whether you call it a Macro Bowl, Buddha Bowl, or Hippie Bowl, prepping this classic ahead of time assures you'll have easy, balanced, and delicious weeknight meals for the busy work week.


For the bowl

  • Choice of healthy grain (quinoa, farro, or brown rice)

  • Plant protein (tofu or tempeh)

  • Beans (chickpeas or gigante beans)

  • Cooked veggies (sweet potato, beets, or cauliflower)

  • Raw veggies (lettuces, sprouts, cucumbers, or radishes)

  • Sauce (hummus or Tamari dressing or both)

  • Crunchy topping (seeds or nuts)


Quick Steps

  1. Prep each element

    • Prep grain per instructions using filtered water or scrappy veggie broth.

    • Dice and marinate plant protein (preferred marinade: coconut aminos and olive oil with a dusting of Nooch), then bake in oven on 350 degrees for about 30 minutes.

    • Soak dry beans overnight, then boil in filtered water or scrappy veggie broth until tender.

    • Dice veggies of choice and roast in oven on 350 degrees for about 30 minutes or until tender.

    • Chop raw veggies.

  2. Prepare the sauces

    • Homemade Hummus:

      • Blend 2 cups cooked chickpeas with a tbsp Tamari, half lemon juiced, 3 smashed garlic cloves, olive oil to taste and desired thickness, salt and pepper to taste.

    • Homemade Tamari Dressing:

      • Blend 1 tbsp Tamari, 2 tbsp rice vinegar, 1 tsp maple syrup, 1 tsp fresh grated ginger, olive oil or water to desired thickness, salt and pepper to taste.

  3. Layer the bowl and enjoy

    • Arrange desired amounts of each element in a bowl and top with crunchy seeds or nuts.

  4. Tupperware

    • Tupperware each element and refrigerate for quick and easy bowls all week long.

    • Please don't stress about having matching Tupperware. Whatever you have on hand is just fine.
